Flavor Chemistry and Technology
This revised edition of Flavor Chemistry and Technology is updated to reflect the latest information and includes new chapters as well, including food/flavor interactions and why low calorie foods do not taste as good as their full calorie counterparts. A strong effort is made to provide an understanding of how flavors interact with basic food components and perform during processing and storage so that judicious choices are made in flavorings. A great deal has changed in this field since the first edition was published. This new edition reflects these developments and flavor chemists, R&D, sensory personnel, and faculty and students in flavor courses will appreciate this book.

Encyclopedia of Islam (Encyclopedia of World Religions)
"Encyclopedia of World Religions" is a new series from "Facts On File" that explores the major religions of the world, emphasizing the living faiths and their historical and social background. Each volume was written by an expert in the field, and reviewed and approved by series editor, J. Gordon Melton. Ideal for high school and junior college students, these authoritative references are accessible enough to be of use to the general reader as well as the serious scholar.
Each volume includes approximately 600 A-to-Z entries that provide easy access to the theological concepts, personalities, historical events, institutions, and movements that helped shape the history of each religion and the way it is practiced today. Fascinating introductions by each author place the religion in context, and further readings, a bibliography, an index, and approximately 80 black-and-white photographs complete these invaluable resources.

God and Logic in Islam: The Caliphate of Reason
This book investigates the central role of reason in Islamic intellectual life. Despite widespread characterization of Islam as a system of belief based only on revelation, John Walbridge argues that rational methods, not fundamentalism, have characterized Islamic law, philosophy, and education since the medieval period. His research demonstrates that this medieval Islamic rational tradition was opposed by both modernists and fundamentalists, resulting in a general collapse of traditional Islamic intellectual life and its replacement by more modern but far shallower forms of thought. However, the resources of this Islamic scholarlytradition remain an integral part of the Islamic intellectual tradition and will prove vital to its revival. The future of Islam, Walbridge argues, will be marked by a return to rationalism.

Combinatorial Computational Biology of RNA: Pseudoknots and Neutral Networks
In this monograph, new combinatorial and computational approaches in the study of RNA structures are presented which enhance both mathematics and computational biology. It begins with an introductory chapter, which motivates and sets the background of this research. In the following chapter, all the concepts are systematically developed. The reader will find * integration of more than forty research papers covering topics like, RSK-algorithm, reflection principle, singularity analysis and random graph theory * systematic presentation of the theory of pseudo-knotted RNA structures including their generating function, uniform generation as well as central and discrete limit theorems * computationalbiology of pseudo-knotted RNA structures, including dynamic programming paradigms and a new folding algorithm * analysis of neutral networks of pseudo knotted RNA structures and their random graphtheory , including neutral paths, giant components and connectivity All algorithms presented are freely available through springer.com and implemented in C. A proofs section at the end contains the necessary technicalities. This book will serve graduate students and researchers in the fields of discrete mathematics, mathematical and computational biology. It is suitable as a textbook for a graduate course in mathematical and computational biology.

The Formation of Islam: Religion and Society in the Near East, 600–1800
Jonathan Berkey’s book surveys the religious history of the peoples of the Near East from roughly 600 to 1800 CE. The opening chapter examines the religious scene in the Near East in late antiquity, and the religious traditions which preceded Islam. Subsequent chapters investigate Islam’s first century and the beginnings of its own traditions, the 'classical' period from the accession of the Abbasids to the rise of the Buyid amirs, and thereafter the emergence of new forms of Islam in the middle period. Throughout, close attention is paid to the experiences of Jews and Christians, as well as Muslims. The book stresses that Islam did not appear all at once, but emerged slowly, as part of a prolonged process whereby it was differentiated from other religioustraditions and, indeed, that much that we take as characteristic of Islam is in fact the product of the medieval period.

Biochemistry, Molecular Biology, and Therapeutic Implications
Each volume of Advances in Pharmacology provides a rich collection of reviews on timely topics. Emphasis is placed on the molecular bases of drug action, both applied and experimental. This volume contains chapters that address diverse but interrelated areas pertaining to the chemistry, biochemistry, molecular biology, and pharmacology of nitric oxide in mammalian cells. The contents form a comprehensive treatise of factors influencing the control of nitric oxide production in various cell types.
Highlights
* Presents comprehensive coverage of the chemical properties of nitric oxide and how they form the basis for the multifaceted biological actions for nitric oxide
* Contains the most current and detailed documentation of the properties and regulation of nitric oxide synthases
* Provides the most up-to-date review of inhalational nitric oxide therapy for treatment of respiratory dysfunction

Science and Technology in World History, Vol. 1: The Ancient World and Classical Civilization
Science is a living, organic activity, the meaning and understanding of which have evolved incrementally over human history. This book, the first in a roughly chronological series, explores the development of the methodology and major ideas of science, in historical context, from ancient times to the decline of classical civilizations around 300 A.D. It includes details specific to the histories of specialized sciences including astronomy, medicine and physics--along with Roman engineering and Greek philosophy. It closely describes the contributions of such individuals as Pythagoras, Hippocrates, Socrates, Plato, Aristotle, Alexander the Great, Euclid, Archimedes, Ptolemy, Seneca, Pliny the Elder, and Galen.
